If you ask us from Salento what the word “OLIO” (oil) evokes in us it is a bit like asking us to talk about ourselves, our youth and all the images, memories, and sensations, and flavors which have and will accompany our life.

Forests of millenary olive trees, men and women clinging to the trees busy picking down to the last olive, arriving at the mill, the first tasting on a slice of warm bread, a smile and then the celebration: a year of work has yielded its fruits.

It is from the best selection of olive from just these two varieties that the Extra Virgin Olive Oil “Case Bianche” is produced. The olives are hand picked at the right stage of maturation and milled within eight hours.

The crushing is carried out traditionally, but using all the modern technological resources. We have in mind two goals: the continuous search for better quality and best possible typicality.

The oil thus obtained it is bottled after a natural decantation, without any filtering process.
