Honey:
a Heavenly Gift
Much is said of honey nowadays but in reality
almost nobody knows all the real qualities
that this extraordinary natural aliment harbors
in its both simple and complex formula. Honey,
it is true, is not easy to use. And this is
why it has been replaced by sugar. But if
people really understood that it is not just
a popular saying but rather a true reality
that honey, for nutritionists, sporting people,
children, the elderly, those with intestinal
problems and constipation, those who need
real energy, those who want to have a healthy
diet, has never belied all the good that was
said of it.

On the contrary,
it has always and only been helpful. It is also true that
we all expect an immediate miracle from a teaspoon of
honey, forgetting that perseverance is good medicine.
Today's frenetic lifestyle, our reliance on immediate-acting
drugs, lead us to neglect the numberless benefits that
a simple and natural product like honey can bring to our
organism. Honey has a centuries' old tradition. We have
been told of its beneficial effects since ancient times
when honey was considered a sovereign medicine, protecting
against sleeplessness when dissolved in a warm infusion
and enjoyed before going to bed, recommended for those
with liver and intestinal problems and against kidney
and bladder infections.
The presence of formic acid in honey helps eliminate gastric
fermentation. Modern pediatrics have rediscovered honey
in infant nutrition because it favors, as it does for
honeybee larvae, the processes of physical development
and growth (helping children assimilate calcium and grow
stronger limbs).
Dietary properties
Honey, as defined by Virgil, is a "heavenly
gift" from the dietary point of view.
As honeybees produce honey, in fact, they instinctively
apply all their wisdom, expertly selecting the right
flowers and overlooking those that are not suitable
for obtaining a good nectar. These precious efforts
create an extremely important aliment with a complex
formula: rich in sugars (levulose) and also with variable
quantities of vitamins, proteins, aromatic substances
as well as mineral salts (potassium, iron, calcium,
sodium, phosphorous, manganese, copper). And everyone
knows the importance of mineral salts for the physiological
well-being of our organism. It is important to emphasize
that honey contains the most important of these "health
factors" in more than satisfactory quantities.
Honey also has the important prerogative of being easy
to digest. The admirable work of the honeybees has already
transformed its sugars into material for immediate biological
use.
Extremely important: crystallization is a natural process
in almost all types of honey. Crystallization is a characteristic
of genuineness if honey and its components have not
been ruined during processing. If you want your honey
to have all the properties we have just described you
should always select a crystallized honey.
Tips
We
recommend, for those who use honey as a sweetener for
milk or in other beverages or infusions, never to add
the honey when the beverage is boiling but only when
it is at drinking temperature. Too high a temperature
pasteurizes the honey and eliminates the majority of
its beneficial properties.
