The artisan amaretti are small biscuits very popular and widespread in many Italian regions. From north to south there are several variations, soft paste, sprinkle with sugar and grains or crunchy, like those we propose in this recipe. The intense taste of amaretti is obtained thanks to the combination of peeled sweet almonds and almonds armelline, obtained from the hazelnuts of apricots and peaches and used in pastry preparations in small doses.
