A rare and inimitable Italian product, Salt of Cervia with salicornia Herb is a sweet salt. The Sweet Salt of Cervia is our brand, what identifies us, but also our product. Behind one and the other there is a story, made up of work, effort, ideas and a community that over the decades has been able to square around its most precious asset, because it is identity, salt.
Cervia salt is a whole sea salt. Marino, because its origin is sea water, which is brought into the saline by the inlet canal, and then evaporated and concentrated until it reaches the production of the actual salt. Wholemeal because once collected it is exclusively washed with mother water (a water with a salinity concentration much higher than that of the sea and lower than that of salt, rich in trace elements and naturally positive substances for the body) and then left dry in the threshing floor, in the piles of salt that can be seen arriving in Cervia from everywhere.
Salt is sweet for geographical, historical and of course also chemical reasons. The position of the saline, the northernmost of Italy, the characteristics of the basins and the Adriatic Sea, make sure that the salt obtained from it is made up of very pure sodium chloride, with a low, almost non-existent presence of other chlorides more bitter, such as magnesium sulphate, calcium, potassium and magnesium chloride. Furthermore, the choice not to artificially dry or chemically whiten the salt leaves it integral and highly soluble. The sweet salt of Cervia in fact maintains the humidity that derives from its path in the tanks and also its typical color, which is not very white, but rather has all the shades of pink and gray that derive from the production process and also historical. Therefore it is a sweet and whole salt, which maintains the fundamental characteristics of health for life unaltered. The sweet salt of Cervia is in fact rich in trace elements present in the mother water (and used in the wellness line) such as iodine, zinc, copper, magnese, iron, calcium, magnesium and potassium.
Healthy product is ideal for meat, fish, vegetables, sauces and soups, special as a seasoner instead of a nut.
Salicornia is a spontaneous plant that finds a unique and irreplaceable habitat in the Salina di Cervia, its fresh shoots are harvested by hand between April and June in limited quantities.
Accompanied by fresh aromatic herbs (parsley and fennel), garlic and pepper, it has always been combined by Salinari with meat, fish, vegetables, sauces and soups, special as a seasoning agent in place of the cube.
