Argalà pastis is the first italian artisanal pastis, it has amber colour, with an alcohol content of 45% by volume.
As a child, at aperitif time, I used to accompany my grandfather to the town square. There, deep in conversation, his friends were waiting under the arcades. Greetings, handshakes and then we sat at the usual table: “Pastis!” they always ordered in unison. After pouring fresh water on it, the amber liqueur intheir glasses changed colour and turned milky white, like a glass of clouds. A real magic to me….
Exceptional as aperitif, it is also very much appreciated as digestive, thanks to the complexity of its aromas and flavours. With its unique taste, in fact, Argalà pastis succeeds in bringing together two relevant traditions of the Maritime Alps: homemade herbal liqueurs and anise based liqueur drunk at the pub.
