The Salami with Pistachios is one of new “flavoured salami” Dolceterra; together with Salami with Olives, Walnuts, and Salami with Pine Nuts. A real Tuscan delicacy.
All these salamis have as a basic ingredient Prosciutto Meat Salami, a sweet and thin salami packaged with selected lean meats from pork thigh, where a part of a sweetmeat of bacon is added. This salami is not to much spicy, and for enhancing the sweet taste, a touch of honey and Marsala wine are added.
During the kneading, when the meat starts to tie, whole shelled pistachios are added.
The Salami with Pistachios requires at least five weeks of seasoning, to be ready for consumption. The meat is seasoned in well-aerated rooms.
The taste of this salami matches well with the marked flavour of pistachios, making together really good salami, highly-regarded in Versilia for the buffets of appetizers, it’s also a tasty and colourful alternative to put on the plates of starters with cured meats.
