The olives are carefully selected and the oil is cold-extracted and left unfiltered, helping preserve the aromas and distinctive character of the fruit.
The Medium Fruity Peranzana expression is delicate and balanced, with aromas reminiscent of tomato and radish and very restrained bitterness and pungency. For a stronger profile, the Intense Fruity Coratina offers pronounced aromatic notes of fennel, mint and hay together with a bold and pleasantly peppery taste.
