Fagottini — "little bundles." Shortcrust pastry gathered around a spoonful of strawberry filling, baked until the edges catch, then dusted with powdered sugar.
They come from Bristot, the artisan pasticceria of San Gimignano, Tuscany, baking since 1957. The difference is made by hand: the dough is worked by hand, and the strawberry filling is spooned into every bundle before it goes into the oven.
Strawberry is the friendliest of the fillings — sweet, fruity, immediately familiar. A safe bet for children, for gift boxes, and for anyone meeting Italian biscuits for the first time.
