Il Gioviale is a bold Tuscan pecorino made with Chianti DOCG wine, added to the milk during cheesemaking (at least 16%), which tints the paste purple-pink and gives a complex aromatic profile.
The wine enhances the natural intensity of sheep’s milk, adding notes of red berries, cellar wood, and a subtle tannic finish. The texture is firm yet sliceable, with a persistent savory depth that makes it ideal for gourmet cheese boards, wine pairings, and premium gifting.
