Delicious and full-flavoured, Parmigiano Reggiano is a quality Italian cheese produced in the provinces of Parma, Modena, Reggio Emilia and part of Mantua and Bologna. These regions are blessed with the best cattle grazing land to produce organic cow’s milk.
With the cheese’s cylindrical shape, it has tapered edges that are almost perfectly straight. Each wheel of this cheese is about 18 to 23 centimetres tall and about 36 to 46 centimetres wide, and weight between 48 and 88 lbs. Its rind is hard and can be dark and oily or naturally golden in colour. The inside of Parmigiano Reggiano is velvety, soft and slightly grainy. The cheese produces delicate, savoury but not spicy flavour.
This cheese is excellent on its own and with several other ingredients, including dessert and appetizers. You can also grate Parmigiano Reggiano cheese on risotto or pasta to flavour the dish. It can also be combined with pears, cheese and chocolate for a delicious mousse.
