Handmade shortbread cookies from Harry's Dolci, the Cipriani pastry shop in Venice. They are crisp rather than crumbly, with a fragrant buttery aroma, a sweet flavor lifted by an unexpected hint of salt, a rustic texture and an irregular, hand-shaped look.
The process is slow and traditional: butter and cane sugar are creamed until pale, each ingredient is added gradually, and the cookies are baked until golden. The dough also includes rice flour alongside wheat flour.
