Method
  1. Boil the pasta al dente. Bring a large pot of well-salted water to a rolling boil (about 10 g of salt per liter). Add the Tirrena Paccheri and cook 1 minute less than the package time — for pasta salad, slightly underdone is better, because the pasta will keep absorbing dressing as it cools.
  2. Cool it properly. Drain the pasta and rinse briefly under cold water to stop the cooking. Drain very well, transfer to a large bowl, and drizzle with 1-2 tablespoons of olive oil to prevent sticking. This is the Italian trick to keep pasta salad from turning gummy.
  3. Prep the ingredients while the pasta cools. Halve the cherry tomatoes. Cube or tear the mozzarella. Small-dice the salami and bell pepper. Quarter the artichokes. Halve the olives. Grate the garlic. Roughly tear the basil last, so it stays fresh and green.
  4. Make the dressing. In a small bowl, whisk the Sicilian olive oil with lemon juice, grated garlic, salt, and black pepper. Taste and adjust — the dressing should be assertive, since the pasta will absorb it.
  5. Combine everything. Add tomatoes, mozzarella, salami, olives, artichokes, bell pepper, and parsley to the pasta. Pour over the dressing and toss gently but thoroughly with two large spoons. Fold in the torn basil last.
  6. Chill for at least 1 hour. Cover and refrigerate. This is not optional — the resting time lets flavors meld and the pasta absorb the dressing properly. Two hours is even better.
  7. Taste and finish before serving. Right before bringing it to the table, taste for salt and acidity. If it feels flat, add a small splash more olive oil and a squeeze of lemon. Scatter a few fresh basil leaves on top for color and serve slightly cool — not ice-cold from the fridge.

    I love the freshness of this salad and that it’s so adaptable. You probably already have all of this in your refrigerator and pantry and can add as little or as much of each ingredient as you like. I always start with a pound of pasta, a generous, big handful of olives (or 1/2 jar), about 4 ounces of diced salami, at least double that of mozzarella, and a pint of cherry tomatoes, topped with 1/4 cup of torn basil. A dressing depends on my mood. Sometimes I just use a little lemon juice and good olive oil with salt & pepper. Other times, I make a quick vinaigrette with Dijon mustard. No exact measurements. A can of artichoke hearts and a red pepper would be tasty additions! Thank you for sharing. Simple and delicious & perfect for summertime when you don’t feel like turning the oven on.
