The aroma of summer truffle is fragile: it carries through heat momentarily, then dissipates. Always add the truffle at the very end, off the heat.
Quick uses:
• Fresh tagliatelle with butter, Parmigiano and 3–4 slices laid on top at the moment of serving
• Soft scrambled eggs finished with 2–3 slices off the heat
• Risotto bianco with butter and a generous spoon of slices stirred in off the heat
• Bruschetta with warm ricotta and a few slices
• A spoon of slices over a beef carpaccio or a fish tartare
