Mixed Vegetable Risotto from Cortisana, a food company based in Genola, in the province of Cuneo (Piedmont): a ready-to-cook mix of Carnaroli rice (84%) with 9% mixed vegetables (carrots, beans, peas, leek, green beans, zucchini, cauliflower, celery, spinach, potatoes, tomato and garlic) and basil, seasoned with olive oil and a vegetable broth base.
It cooks in a single pot with water in about 20 minutes, with no stock to prepare. Finish it with a knob of butter and some grated Parmesan, as the producer suggests, and serve it as a first course or as a side dish.
