Sicilian Provolone with Lemon is an Italian cheese made using cow’s milk, alongside lemon to give it notes of fruits. The cheese is round shaped with a small round head which results from tying-off of its neck.

Provola from Alcantara Formaggi (Azienda Casearia Camuglia) in Castiglione di Sicilia, in the Alcantara valley at the foot of Mount Etna. A pasta filata cheese of cow's milk from eastern Sicily, coagulated with lamb rennet: the curd ripens at least 24 hours, then is stretched and shaped entirely by hand around a whole untreated verdello lemon from the Alcantara valley.
