Asiago DOP/PDO Cheese "Fresco" Agriform is an Italian cheese from the mountainous Asiago region where the lush meadows provide great pasture for cows to develop top quality milk. The cheese is aged for about 20 days to develop a straw coloured semi-firm paste that provides a mild fruity flavour.

Produced from pasteurized whole cow’s milk, Asiago DOP/PDO Cheese "Fresco" Agriform is formed into washed-rind wheels and develops a straw-colored that has a mild fruity flavour. The mild fruity flavour cheese has a crumbly texture, small medium irregular holes and melts nicely on the palate.

Asiago DOP/PDO Cheese "Fresco" Agriform can be used for grating, melting, as well as slicing on a variety of soups, sauces, pasta, sandwiches and salads. It is also excellent for snacking, serving crusted bread and pairing with recipes. It also pairs well with white or red wine. Asiago PDO Fresco from Agriform in Sommacampagna (Verona), made from pasteurized whole cow's milk from one or two milkings and ready after about 20 days of aging. The paste is soft and pale, with marked irregular holes; the thin rind is not edible.

Ingredients: Pasteurized cow's milk, salt, cheese cultures, rennet. Rind not edible.

An out-of-the-ordinary treat

These crunchy and light Italian cookies are unusual in texture, which makes them out-of-the-ordinary. They are also heavily flavored, one person in my family thought it was cherry, the name refers to almond flavor, but they are in fact made from apricot pits.

I loved the tin container that they come in and the fact that each is individually wrapped in plastic and then a decorative paper wrapping. It makes each little cookie something to focus on.
