Datterini are small, date-shaped tomatoes. Masseria Dauna grows and harvests them on its own land in Lucera, in the province of Foggia, Apulia, and preserves them simply in water with added salt.
The producer recommends them especially for fish dishes.
Ready to use as they are, with or without cooking. Drained, they are good uncooked with mozzarella or burrata, in salads and on bruschetta. For quick pasta sauces, sauté them whole or lightly crushed in extra virgin olive oil with garlic for a few minutes, adding a little of the packing liquid to loosen the sauce. Also good with fish and seafood and in stews; drain them before using on pizza and focaccia.
Taste before adding salt, as the tomatoes are packed in salted water.
