Masseria Dauna grows its tomatoes in Lucera, in the province of Foggia, Apulia. These pelati are peeled by hand and picked at full ripeness, which gives them a naturally sweet taste.
The producer recommends them with light sauces rather than rich, fatty ones, so the flavor of the tomato stays in the foreground.
Ready to use as they are, with or without cooking. Chopped and dressed with extra virgin olive oil, fresh basil and a pinch of salt, they make a quick bruschetta topping. For a classic sauce, crush them by hand or with a wooden spoon directly in the pan, then simmer with olive oil, garlic or onion and basil. For ragù, braises and soups, add them whole and let them break down slowly during cooking. For pizza, crush them and drain off the excess liquid before spreading.
Season with salt to taste.
