Spaccatelle Sliced Tomatoes from Apulia - Masseria Dauna

Spaccatelle are made by Masseria Dauna in Lucera, in the province of Foggia, Apulia, using only fresh, ripe tomatoes grown on the farm and harvested by hand. The tomatoes are washed and carefully sliced with the skin left on, then packed in glass jars and cooked in a water bath.
The result is a bright red tomato with a fresh, sweet flavor and very little acidity, ready to go straight into the pan.
Ready to use as they are, with or without cooking. Uncooked, they are good on bruschetta, with mozzarella or tossed with hot pasta, extra virgin olive oil and basil. The split tomatoes also suit quick pan sauces where pieces of tomato should stay visible: warm them in olive oil with garlic for a few minutes and toss with pasta. They work well on pizza and focaccia, with fish in acqua pazza style and in vegetable sautés.
Taste before adding salt, as sea salt is already among the ingredients.
