Quick lemon risotto for a refreshing twist

 

This creamy risotto dish has a delightful lemon twist. It’s also a healthy option as there’s no cream in it! You can choose which rice you want to pair this risotto with, we recommend arborio rice or saffron risotto, both will enhance the flavour of your dish. 

 

You’ll need:

  • 1 cup of rice

  • Half an onion – finely chopped

  • 3 tablespoons of butter or spread

  • A generous dash of white wine – preferably a dry one

  • 2 tablespoons of lemon juice and the zest of one lemon

  • 4 cups of chicken broth

  • 2 tablespoons of oil, preferably olive oil

  • Some finely chopped parsley

 

 

Creating your Lemon Risotto:

  • Start by heating the olive oil and butter in a pan

  • Once it’s melted, add the onions and cook for several minutes

  • Now add the rice and cook for another three minutes

  • You can now add the wine and chicken broth. Make sure they are fully absorbed 

  • Remove your pan from the heat and add the lemon juice, lemon zest, cheese, and parsley

Serve and enjoy.

 

Mushroom risotto in under 30 minutes

 

Another of the best classic quick risotto dishes, is mushroom risotto. It’s full of flavour and can be prepared from scratch in less than 30 minutes.

You’ll need:

  • 50g butter

  • 350g your preferred rice

  • ¼ bottle of your favourite white wine

  • 600ml of hot vegetable stock

  • 150g mushrooms – chop these into small pieces

  • 30g genuine grated parmesan

  • 3 small onions finely chopped

  • 1 crushed garlic clove 

To create the dish:

  • Add your butter to a pan and melt it on the stove

  • Now add the onions and your garlic, fry to soften

  • Tip your rice into the pan and cook for a few minutes

  • Now add the wine and stock- ensuring they are fully absorbed

  • Add your mushrooms and cook until the rice is soft

  • When the rice is ready, add your parmesan

  • Stir briefly, then serve

 

One-pot Parmesan risotto for a creamy delight

 

This quick risotto dish uses a Dutch Oven. If you don’t have one, try  slow cooker or even a pressure cooker. It’s particularly good as you can prepare it before work and it will be waiting for you when you get home.

 

You’ll need:

  • 1.5 cups of your preferred rice. We recommend arborio or saffron

  • 5 cups of chicken broth

  • 3 tablespoons of butter

  • 1 cup peas – preferably frozen

  • 1 standard glass of white wine

  • 1 onion finely chopped

  • 1garlic crushed

  • 1 cup genuine parmesan cheese

 

Here’s what you need to do:

  • Take your Dutch oven and spray it with non-stick cooking spray. 

  • Add your rice, chicken stock, garlic, and onion

  • Add the lid and cook in the oven at 350°F for 45 minutes. If you have a timer, set it so that the oven turns on 45 minutes before you get home.

  • Now add the butter, wine, peas and most of the parmesan cheese. (Save a little to go on top of your risotto). Stir the mixture thoroughly

  • Serve on warm plates, add the final bit of cheese on top, and enjoy
