Crafted in Tuscany, Tirrena Paccheri are made using a blend of ancient Italian wheat varieties and traditional slow-drying methods.
This pasta is produced with Senatore Cappelli, Khorasan, and Evoldur ancient grains, stone-milled and processed entirely in Italy. The dough is extruded and slow-dried for 84 hours, a critical step that preserves flavor and texture.
The Paccheri shape is ideal for rich sauces: the ridged surface and thick walls capture sauces beautifully, making it perfect for ragù, creamy sauces, and vegetable-based recipes.

Holds structure even with bold, dense condiments.
Cook in plenty of salted water (about 2 L per 100 g of pasta, roughly 10 quarts per pound) at a rolling boil for 18-20 minutes — the long drying time means a longer cooking time. Finish in the pan with the sauce to allow it to absorb.
