A chocolate panettone for people who take chocolate seriously. Pasticceria Scarpato fills the dough with a cream made from single-origin São Tomé extra dark chocolate (71% cocoa) and packs a sachet of powdered sugar to dust over the cake at the table.

Scarpato has been baking in Verona since 1888, and the dough still rises slowly on a white mother yeast kept alive through generations. Eggs, butter and whole milk give it a soft, feathery crumb that pulls apart in strands.

Serve it after a holiday meal with espresso or a glass of dessert wine, or give it to the chocolate lover on your list.

HOW TO SERVE

Panettone is best at room temperature, never cold. If it has been somewhere cool, let it sit out for an hour before slicing.

For the full effect, warm a slice for a few seconds the butter softens, the aroma opens up, and the crumb goes from good to extraordinary. Serve with espresso in the morning, or with a glass of sweet wine after dinner.

Cut it in wedges from the top, like a cake. Reseal the bag and it keeps for days.
