White Truffle Cream is at its best as a finishing element — never cooked at length, the aroma of the truffle dissipates with sustained heat.
Quick uses:
• 1–2 teaspoons over a plate of buttered tagliatelle, off the heat
• Stirred into a finished risotto at the last moment, off the heat
• On a crostino with a drizzle of EVOO and freshly cracked pepper
• Folded into soft scrambled eggs at the end of cooking
• Over gnocchi with grated Parmigiano
• As a finishing element on polenta
The cream is meant to be used a teaspoon at a time — the aroma is concentrated.
