Tortelli filled with Bagòss cheese from Pastificio Gerola, a family pasta workshop in Flero, near Brescia (Lombardy), that makes traditional Brescian specialties in limited batches. A thin fresh egg pasta wraps a filling of Bagòss and ricotta.
Bagòss is an aged mountain cheese made only around Bagolino, in the Brescian Alps, from raw cow's milk with a pinch of saffron. The classic Brescian way to serve these tortelli is the simplest: melted butter, sage and a dusting of grated cheese.

Cook in plenty of salted boiling water for 5-7 minutes, as Pastificio Gerola recommends, then drain gently. The classic Brescian serve is with melted butter, sage and grated cheese.
Ingredients: Pasta (55%): type "00" soft wheat flour, eggs (28%), durum wheat semolina. Filling (45%): Bagòss cheese (17% of the filling) (raw cow's milk, rennet, salt, saffron), ricotta (whey, pasteurized cow's milk, salt, lactic acid), grated cheeses (milk, salt, rennet, lysozyme (egg protein)), breadcrumbs (type "0" soft wheat flour, brewer's yeast, salt), potato flakes (dehydrated potatoes, mono- and diglycerides of fatty acids), sunflower oil, flavors, vegetable broth (salt, potato starch, dehydrated vegetables (onion, carrot, celery, parsley), vegetable protein extract from soy and corn, sunflower oil, spices, natural flavors), salt, pepper. Type "00" soft wheat flour.
