Cantucci are the twice-baked almond biscuits of Tuscany, and these come from Antico Forno Santi, the brand of Biscottificio di Migliana in Pistoia, a biscuit bakery founded in 1920. The dough is simple: wheat flour, sugar, eggs, almonds (23% of the recipe) and pine nuts. Baked twice, they are dry and crunchy.
The classic way to eat them is dipped in a small glass of Vin Santo at the end of a meal. They also go well with espresso, a cappuccino or a glass of sweet dessert wine.
