The “IGP Platinum” Balsamic Vinegar of Modena is obtained from aged cooked grape must, produced by Malpighi family, and Wine Vinegar which ages for a long time in oak French barrels.
Selected raw materials, variable climate of Modena, aging in valuable wood barrels. These are the main ingredients to obtain an excellent modenese product, obtained following the IGP Procedural Guideline.
Acetaia Malpighi dedicates the product to all those who love good cooking and don’t want to give up Balsamic Vinegar daily.
Uses: suitable for veggie salads, raw or cooked vegetables, roast meat, Carpaccio and boiled meat. To try in small drops on Risotto, Buffalo Caprese, fresh strawberries and artisanal ice cream.
Density: 1,36
Limpid in the glass, intense brown in color. Round and full on the nose. Velvety and balanced on the palate. Density 1.36. Acidity 6%.
