Sicilia PGI extra virgin olive oil from native Sicilian olive varieties, certified and monitored by IRVOS (Regional Institute of Wines and Oils of Sicily), recognized by the Italian Ministry of Agriculture, Food and Forestry, all the way to bottling in numbered bottles.
Green with golden hues, it is medium fruity with grassy notes and a bold taste, with persistent bitterness and pungency. Best enjoyed raw, on roast red meats and legumes.
Cultivars: Nocellara dell'Etna, Nocellara del Belice
Production area: the slopes of Mount Etna and the Simeto Valley
Grove altitude: 500–800 m (1,640–2,620 ft) above sea level
Free acidity (as oleic acid): 0.20–0.50%
Harvest method: by hand
Harvest period: early harvest
Extraction: continuous cold extraction on the same day as the harvest
Sicilia PGI extra virgin olive oil from native Sicilian cultivars, Nocellara dell'Etna and Nocellara del Belice, grown at 500–800 m above sea level on the slopes of Mount Etna and in the Simeto Valley. Hand-picked early in the season and cold extracted with a continuous system on the day of harvest. The whole chain is certified by IRVOS (Regional Institute of Wines and Oils of Sicily) up to bottling in numbered bottles.
