From the volcanic slopes above Bronte, on the eastern flank of Mount Etna, this is a PDO (DOP) extra virgin olive oil Sicily's most protected origin designation. Every drop is pressed from Nocellara Etnea olives grown strictly within the Etna zone, and the entire supply chain, right down to numbered bottling, is certified and controlled by Agroqualità S.p.A. on behalf of the Italian Ministry of Agriculture. This is olive oil with paperwork: a guaranteed origin you can taste.
In the glass it pours veiled and opalescent, with intense green tones unfiltered, the way traditional Sicilian oil is meant to be. The nose is medium-fruity with a clean note of freshly cut grass, and the palate opens bitter and pungent before settling into a signature ripe-tomato finish. It's a finishing oil first: pour it raw over pulses and legumes, spoon it across roasted meats, or simply drag warm bread through it.
What makes this bottle unmistakably ours is the vessel. Each orcio is thrown and hand-painted in Sicily, decorated with the prickly-pear (fico d'India) motif and Etna's own colors by our artist no two are identical. The glazed ceramic is completely opaque, which is exactly what fine oil wants: it shields the oil from light and keeps it fresher for longer. Sealed with a natural cork, it's a genuine piece of Sicilian craft that lives on your table long after the last drop, and arrives ready to give.
