This one arrives with an accessory. Alongside the panettone comes a piping bag filled with spreadable pistachio cream, so each slice can be finished at the table exactly as generously as the person eating it wants. It is a small piece of pastry-shop theater, and it works.

The cake underneath does not need the help. Penna Bakery raises it on mother yeast alone, over a long slow fermentation that makes it strikingly light and easy to digest, and studs the dough with pistachio cremino — white chocolate blended with pure pistachio paste. The dome is then coated in Valrhona white chocolate and showered with chopped pistachios, which give every bite a clean, resinous crunch against the sweetness.

As with everything the two brothers bake in Santa Maria di Leuca, at the southern tip of Puglia, the list of what's absent matters: no preservatives, no pre-made bases, no artificial flavorings, no vegetable fats. Soft wheat flour, butter, fresh pastured egg yolks, acacia honey and Madagascar bourbon vanilla from whole pods — nothing else.

HOW TO SERVE

Panettone is best at room temperature, never cold. If it has been somewhere cool, let it sit out for an hour before slicing.

For the full effect, warm a slice for a few seconds the butter softens, the aroma opens up, and the crumb goes from good to extraordinary. Serve with espresso in the morning, or with a glass of sweet wine after dinner.

Cut it in wedges from the top, like a cake. Reseal the bag and it keeps for days.
