Traditional Balsamic Vinegar of Modena DOP with aging characteristics of more than 25 years. With a fully harmonious and mature taste, it is characterized by high density and intense and persistent aroma.
Acetaia Malpighi has been handing down its traditions for all of 5 generations, offering a traditional balsamic vinegar with unique taste and aroma, the most gratification that time can reserve for us. For aging and refinement, Malpighi uses cherry wood. This has the great capacity of making Traditional Balsamic Vinegar of Modena extremely sweet, creamy and very "well-rounded", with almost imperceptible acidity. This is why Acetaia Malpighi has chosen to market this product with its unique organoleptic characteristics, able to enhance the value of any dish. Excellent on meat, fish, first courses, cheeses, sweets, etc.
Limpid in the glass, dark and lustrous brown in color. Decisive and harmonious on the nose. Dense and velvety on the palate, fully mature and structured. Density 1.34. Acidity 5-6%.
A single drop from a small porcelain or plastic spoon — never aluminum — at the end of a meal as a digestivo · on slivers of well-aged Parmigiano Reggiano · on fresh strawberries, cherries and berries · on vanilla ice cream · on panettone and strudel · on meat tartare · on risotto finished off the heat · with dark chocolate desserts · in refined cocktails (try the Malpighi "Antico Mosto": Brachetto, Magique Noir and a drop of Extravecchio)
Ingredients: Cooked grape must of Modena grapes (Trebbiano, Lambrusco). No added caramel color, colors or preservatives.
