The Extra Virgin Olive Oil "Pinzimolio" is cold extracted from olives that are only partially ripe. This gives the oil a fresh perfume and a taste that is flavorful without being aggressive, which makes it ideal for dressing all types of fresh vegetables (celery, fennel, radishes, artichokes, carrots, tomatoes) and excellent for making pinzimonio (from which it derives its name): a typical Italian appetizer, a delightfully simple dip for crisp raw vegetables made with olive oil, salt and pepper.
"Pinzimolio" is bottled "mosto" (unfiltered), after simple decantation in underground tanks; it has a yellow color with green hues.
It comes in the traditional ribbed bottle with a swing-top stopper, and each bottle comes with a cork pourer.

100% Italian, Cold extracted
Made from olives picked when only partially ripe, crushed and cold extracted. Bottled unfiltered ("mosto") after simple decantation in underground tanks, it is yellow with green hues. Packed in the traditional ribbed bottle with a swing-top stopper; a cork pourer comes with each bottle.
Tasty but never aggressive. Made for crudités and pinzimonio: celery, fennel, radishes, artichokes, carrots and tomatoes dipped in oil. Also excellent on bruschetta, salads, mozzarella, raw meat carpaccio and marinades.
