plantation height: 600–800 mt on sea level;

harvest method: by hand;
harvesting period: early harvest;
pressing method: continous cold extraction in the same day after the harvest

Nocellara dell'Etna olives grown on the slopes of Mount Etna (600–800 m), hand-harvested early with combs and cold-extracted (two-phase) on the same day, using mechanical methods only.
Best used raw, on Mediterranean dishes: bruschetta, grilled vegetables, legume soups, fish and white meats.
Ingredients: Extra virgin olive oil (Nocellara dell'Etna).
