A fruity dressing made with cooked grape must, fig concentrate and Balsamic Vinegar of Modena PGI (20%). Dense and sweet, with ripe fig notes and a gentle acidity — excellent on aged cheeses, white meats, fresh fruit and aperitivo boards.
Limpid and deep brown in the glass. Round and full on the nose, with a clear fig aroma. Decisive on the palate, with the distinctive sweetness of ripe fig threading through the depth of the cooked-must base. Density 1.30.
Aged cheeses — Pecorino, Parmigiano Reggiano, Gorgonzola · white meats and roasted poultry · fresh fruit — figs, melon, candied fruit · aperitivo boards with aged cheese and charcuterie · a few drops on goat cheese with walnuts · with foie gras or game preparations · in cocktails and gin-based mixology
