La Struncatura Picché is the spicy version of struncatura, the rustic pasta of the Gioia Tauro plain in Calabria, made exclusively for Picchè Food of Gioia Tauro. Stone-ground grains from the Aspromonte (wholemeal durum wheat, rye and durum wheat semolina) are mixed with chili flakes from the Monte Poro plateau and slowly dried at 38–45 °C (100–113 °F).
Struncatura was once made from the flour and bran left over from milling; today it is a prized local specialty. Dark, rough and irregular, with a rustic flavor and a gentle heat, it holds sauce well. In Calabria it is dressed simply with olive oil, garlic and anchovies, and it is just as good with 'nduja or a tomato sauce.

Cook in plenty of salted boiling water until al dente, tasting as it cooks: this rustic pasta has no fixed cooking time on the pack. Once opened, use within 15 days.
