Obtained from the cold processing of only single-variety taggiasca olives harvested by bacchiatura and processed within 24 h from harvest; it is an extra virgin olive that has passed severe examinations and a careful test of the panel test: analysis that objectively evaluates all sensory characteristics. The taste offers a sweet, fruity aroma and a delicate and round taste. First Ligurian oil classified in the light fruity category at the "Ercole Olivario".
Ideal raw especially on fish for delicate sauces (mayonnaise) and in the preparation of refined desserts.
