It is cured for at least 8 months to give it its strong flavours and aroma of ripe fruits with slight animal notes and spiciness. The cheese is called “drunken” because it is soaked in a great aging Amarone wine. Amarone wine is one of the most valuable Italian red wines distinguished by the intense scent of cherry, walnut and spices, which gives it its robust taste.
Drunken Amarone Traditional Cheese pairs well with many recipes and dishes. Although it already offers a taste of wine, you can pair it with red wine or white wine. Don’t leave your friends and family behind; treat them to a royal cheese by giving them this cheese.
Redivino from Corrado Benedetti, cheese affineur in Sant'Anna d'Alfaedo, in the Lessinia hills north of Verona: an aged whole cow's milk cheese refined first in red grape pomace and then in Amarone della Valpolicella DOCG wine.
Ingredients: Cow's milk, salt, cheese cultures, rennet. Refined in Amarone della Valpolicella DOCG wine (3–4%); contains traces of sulfites.
