Partially matured pecorino cheeses are wrapped in sprigs of mint and placed inside barriques, where they are left to mature. In time, the intense flavour of the mint penetrates into the heart of the cheese, achieving a perfect balance.
How to Enjoy it
In thin slices, accompanied by a cider and mint jelly.
