One of the oldest pasta filata cheeses of southern Italy, Caciocavallo Silano PDO is made by Caseificio Palazzo (Murgella brand) in Putignano, in the Murgia area of Puglia, from raw Italian cow's milk.
The name tells how it is made: the forms are tied in pairs and hung a cavallo — astride — wooden beams to age. Sweet and buttery when young, it becomes more piquant and complex as it matures.
Slice it for a cheese board, or grill thick slices until golden and melting.
