The amaretti are small biscuits very popular and widespread in many Italian regions. From north to south there are several variations, soft paste, sprinkle with sugar and grains or crunchy, like those we propose in this recipe. The intense taste of amaretti is obtained thanks to the combination of peeled sweet almonds and almonds armelline, obtained from the hazelnuts of apricots and peaches and used in pastry preparations in small doses. The processing of the amaretti is not complex: the almonds, powdered sugar and semolina are chopped together finely and mixed with egg whites. But once formed the dough need to rest in the refrigerator all night to get the right consistency. The amaretti are the right cookies for a sweet break or to accompany the moment of tea! They are also perfect as a filling for cakes or tarts!
