This particular conditioning technique follows a very similar process to that of the larger cheeses, but the result is totally different. This is due to the original cheese, which is of a smaller size in the extra version. The selected cheeses are conditioned at the Corrado Benedetti premises in Croce dello Schioppo to develop and enhance their ﬂavours. The process involves prolonged contact with a purée obtained by macerating cherries. The custom of hiding cheese under fruit goes back centuries and is the origin of this product. This version of Nascondino has fresh, delicate ﬂavours and a distinctive reddish colour.
