Vento d’Estate cheese is an award-winning raw cow’s milk cheese from Vento, Italy. Aged in barrels with freshly cut hay, this cheese is creamy, aromatic and delicious.
Named Vento d’Estate, the inspiration of this cheese came to Antonio and his wife while driving home after picking a few wheels of cheese. As they were passing a tractor pulling hay, they were overcome with the aroma of hay and stopped the farmer to ask if they could buy some.
After a lot of experiments, they finally found a way to age Vento d’Estate for 5 months under a blanket of hay. The cheese exhibit the aroma of the meadow they sensed when they bought the hay and they were highly elated.
With a waxy rind displaying a cream-coloured and bits of hay, crumbly and dense paste, this cheese offers smells of freshly cut grass and wood. Its flavour is milky along with a sharp tang. This cheese can be consumed alone and paired with a full-bodied, non-tannic red wine.
Ingredients: Pasteurized cow's milk, milk enzymes, salt, kid rennet paste, organic high mountain hay in crust. Milk origin: ITALY. (non-edible rind)
