Ventresca is the belly of the tuna: the most tender and richest cut, long prized in Italian kitchens. This jar holds ventresca of Mediterranean bluefin tuna (Thunnus thynnus) from the Sangiolaro Vecchia Tonnara line of Ghezzi Alimentari, processed with artisan methods in Italy and packed in olive oil with a little salt.
The flakes are soft and moist, with a fuller flavor than ordinary canned tuna. Serve the ventresca as an antipasto with a drizzle of its oil and a squeeze of lemon, toss it with pasta, cherry tomatoes and capers, or add it to salads with beans, potatoes or onions.
